good compared with common cereals. Quinoa seeds
contain essential amino acids like lysine and good
quantities of calcium, phosphorus, and iron. Quinoa
seeds are in general cooked the same way as rice
and can be used in a wide range of dishes. Quinoa
leaves are also eaten as a leaf vegetable, much like
amaranth. Quinoa does best in sandy, well-drained
soils with a low nutrient content, moderate salinity,
and a soil pH of 6 to 8.5. It can be grown in most
garden conditions in most areas of Australia. Sow
the seeds shallowly or rake into finely prepared beds.
Keep moist until established. The plant will grow to
1.5-2m in height as it matures and sets seed. Wash
the seed several times before use. The seed has a
bitter coating which prevents insect damage.
