It is ideal for pickles, cooking and even eaten raw. The striking red and white rings make it ideal for bottling in vinegar and look very attractive when served. Beetroot is adaptable to all climatic zones. Before planting it is a good idea to soak the seeds for a few hours prior to direct sowing in the garden in drills 20-30cm apart and 12mm deep. Space rows 40cm apart. Cover seeds with compost or vermiculite and keep moist. The best times to sow seed in temperate climates is July to March, and September to February in colder areas. Beetroot keeps well in open storage for a few weeks once picked, but will keep for 2 to 3 months when stored in a fridge.
